Retrurning to Basic!
Let me set the scene for you:
Hollywood barracks, Fort Jackson, S.C. summer 1985.
If you know, then enough said. If not; then let's just say pain ain't got nothing on what is coming next. "Mmm, I love the smell of fear on a young soldier."
Fast forward:
Personal Trainer Carol Glasgow Training Room
November 2012.
Dear God, I never thought I would want to do this to myself willingly again; but here I am putting my body to the test. Placing what years of oh so delicious hot wings, delictable milk shakes and let's not forget.......the incomparable Twinkie has done to me into the hands of yet another Drill Instructor. One would think me daft or worse! Not so. Years of trying to muster the strength to do it all myself lead me to a hard reality. I need a swift kick to get going and no one was better at it than my Drill; until now. Carol is a take no prisoners type of person and has already gotten more sweat out of me than I thought possible without tying a Twinkie on a string and having me chase it.
When I think back on life in general: don't we always have to return to basic to get to where we need to go? Thanks Drill Sgt. Putt and Carol Kickfever Glasgow..

I've got this!!
Kitchen is all set. We have enough people on for a light Sunday Brunch. I think I will leave early and take in a movie with the wife.
Step out of the kitchen to say my goodbyes and prepare for a quick getaway. In my minds eye, I see my wifes face all lit up, happy and shocked to see her husband early and with plans to go out to boot!
"Hey chef, I just heard there are about 15 people coming in for brunch any minute" ; someone bellows to me. Damn! But no problem, it is only 15 people. If these guys can't handle a 15, then I need a whole new team. They are good. I'll just hang for a few minutes to make sure all is together and then.....movies, here I come! My team is in high gear; making me feel like a proud "papa". So I head back towards the door and the movies.
Pull back the curtain to step out of the kitchen, it is a madhouse. There are people everywhere, a waitress rushes past me saying; "you still here chef? Hey the chef is still here, don't worry bout the line outside. He's got it.
Backing up into the kitchen, dupes are spitting out, looking like ticker tape. "Chef! I don't know what happened, it just won't stop. The orders just keep coming!" Another young cook who has just burned his hand telss me: "Chef, you should go. We can handle it."
Reaching for the hot skillet, with one hand and organizing dupes with the other; I settle in for the long haul, thinking to myself simply: the waitress was right, you've got this.

2012. The year of no prisoners!!
Catering kitchen opening in February to precede the opening of restaurant in Spring 2012. Construction/cleaning proceeding on kitchen and will culminate in the opening of Nu Urban Cafe's Catering department, with utilization of a 130person catering hall. We will be catering to all types of functions, ie: Wedding, Showers, Birthdays, Engagements, Receptions, Cocktails, Corporate Seminars etc. Nu Urban is on the move in 2012 and quickly. All of the preceding to culminate in an extraordinary Grand Opening of the Restaurant!
No prisoners in 2012. The train is rolling forward fast; jump on quick or stand to the side and watch!
